Healthy Vegan is all about eating clean AND satisfying your tastebuds.

They do give some good cost saving tips such as eating seasonal produce and using up what produce is on hand, which is also one good way to avoid food waste, and of course things such as cooking from scratch and batch cooking. To have so many ingredients on hand is not that budget friendly though. item-todo-done>1 tsp fine sea salt150g Jasmine rice300ml cold water1 Jasmine tea bag - or jasmine flower1 star anise I recommend reading Hilary’s review. She has made some of the recipes in this book. https://www.goodreads.com/review/show... Put the pan on the hob, add the boiling water and a pinch of salt, cover and bring to the boil over a high heatI love the BOSH! boys, their energy and their totally original, exciting approach to simple, tasty plant-based food.’ Henry: I was never a big fan of eggs and to be honest I’m not that keen on vegan egg replacements either! Ultimately, Bosh! wins at creativity. Whichever way you consume your cookery content, whether it’s through the screen or in a greasy-fingered book, Bosh! is the light touch ‘how to’ of modern plant-based cooking No! Writing with budget constraints really got our creative juices flowing and made us think out of the box for ways to create maximum flavour with minimum cost.

Ian: Gorge on plant-based recipe videos on the internet - a couple of hours of those will make you realise you never have to miss out on a plant-based diet! Whether you’re living completely meat-free, or just looking to introduce more plant-based dishes into your meal plans, BOSH! on a Budget could be the cookbook you are after. There is an array of meals here. Breakfast and brunch, light meals, entertaining, comfort foods and desserts are all included. The ingredients are familiar and readily available and, for the most part, cheap. I dare say that even those cooking in a non-vegan household will enjoy these dishes, even if they take the liberty of replacing the specified dairy-free butter with the one they already have in the fridge. Take the pan off the heat and set it to one side, leaving the lid on but with a small gap to let out steamFrom Breakfast + Brunch not that much appealed to me, mostly because I usually prefer savory foods in the mornings and most of these recipes were sweet. The hash brown breakfast pizza looked interesting but there is sugar in that recipe too. I do like sweet things but I don’t like sugar in my savory dishes but I might like a couple of the recipes for dinner/dessert. I did appreciate the smoothie suggestions for each of the seasons, though I prefer eating vs. drinking my food. Place the pan over a medium heat and add the olive oil. Once the oil is hot, add the veg, stir, cover and cook over a low heat for 20 minutes, stirring occasionally, then remove the lid. Number one Sunday Times bestselling authors Henry and Ian know how to make outrageously tasty, super satisfying food without breaking the bank. In BOSH! on a Budget, they share over 100 delicious recipes and prove that great tasting food doesn’t have to cost the earth.

I have been happily oblivious to the Bosh! phenomenon on social media, content in what the book alone has managed to achieve in our house. It was more than a recipe book. It was a guide to making meat-free food that the kids would eat, showing us how to bolster and layer flavours using everyday ingredients in recipes that you could have any day of the week and with stuff you have in the cupboards. We’ve written a fair few bolognese recipes over the years, but this one, made with celeriac and lentils, is one of our best. Be warned though, it makes a BIG batch! One portion of this will happily feed 16 people, but it freezes like a dream, which means you’ll have something delicious to eat even if you don’t fancy cooking from scratch! Timings
