I liked all the standard expressions of Casa Noble as well, though I do love the redesign, which has replaced the short, squat bottles with taller, more minimalist vessels. Blanco: Unaged. Very grassy on the nose, a note that continues through a bright agave expression that features strong hints of lemon and grapefruit. I think this bottles does a good job of balancing the need for branding and marketing while still having a clean look that showcases the spirit. PH: Our partnership with Carlos Santana was incredibly helpful in giving Casa Noble visibility when it first started and opened up doors for us to become a part of Constellation Brands. Becoming part of the Constellation portfolio has helped open distribution pipelines and allowed us to experiment more with cask finishes and innovations. Like all of Casa Noble’s offerings, this one is certified organic, and has a limited number of bottles in select cities around the country. It’s best sipped slow for a warm, inviting mouthfeel.

You still get the herbal agave in the spirit coming through, and the citrus flavors we’ve been seeing work well with the Cointreau and lime juice. I think it still might be a touch bitter for some, but I found the overall result a refreshing change from the usual overly-sweet margaritas we tend to see. Casa Noble maintains its tequila flavors are deeper and more complex than its competitors’ because of the cooking process. Most tequila producers cook the agave for six to eight hours at intensely high temperatures, like a pressure cooker. The agave used at Casa Noble gets slow-cooked in stone ovens for anywhere between 36 and 38 hours, which imparts more complex, smoky, and vegetal characteristics. It Opts for French Oak Casks The smoky characteristics that we’ve been seeing make an appearance, but you won’t notice them unless you really look. It adds some depth and balance to the other flavors without announcing itself (like you might see with a particularly smoky mezcal). Instead, it lends a subtle support here, and the result is absolutely delicious. The fermentation length, temperature and yeast affect the development of flavor compounds or congeners that produce a specific tequila style. Some producers add piña fibers called bagasse to the fermentation vessel to enhance the complexity of the spirit. Regulations demand that tequila be double-distilled in pot stills, or produced with a continuous still that has at least two columns. Jose would go on to earn a degree in economics from the University of Dallas, and in 1997 he founded the Casa Noble tequila brand. The original concept for the brand was to take something as quintessential as Mexican tequila and create an upscale, quality brand that could counteract the negative perception of the spirit that was common in the late 1990s. He partnered with Carlos Hernandez, who owned an estate in Mexico, and together they started growing, harvesting, and distilling their own spirits.

Casa Noble Tequila Blanco

Casa Noble is one of several organic-certified tequila brands, but that’s not why it’s good. No, this is good tequila because it’s a crisp, spicy, flavorful, and very versatile spirit. The brand underwent a redesign in 2021, changing the bottles from their former squat, boxy shape to more elegant decanter-style glass. The liquid has been updated as well, with a focus on barrel selection and blending, and eliminating the single barrel releases you could once find. According to founder and master distiller Jose “Pepe” Hermosillo, this means the reposado and anejo expressions are created by “selecting different barrels according to characteristics and integrating up to 14 lots to create complexity and balance.” These aged expressions spend a longer amount of time maturing than some other brands, with the anejo aged for two years in French oak barrels and the reposado for 364 days. All of the tequila is triple distilled, and the distillery implements many sustainable practices. Marques de Casa Noble came out in 2022, a blend of 12 extra anejo and 9 anejo tequilas matured from one to five years in specially selected French oak barrels that were aged for three years before being filled. JM: Cask-finished Tequila, once a rarity, is increasingly common. What cask finishes/liquids best complement Tequila's aroma and flavor profile? Most reposado tequila is aged in second-fill American bourbon barrels. But Casa Noble believes those types of barrels allow too much char flavor into the tequila. Instead, the light char inside French oak barrels is better suited to the Casa Noble brand. The distillery’s reposado expression ages for one year in used French oak casks, while the añejo spends two years in new barrels before bottling. Where it’s from: Casa Noble itself has been around since 1997, and it’s earned its fair share of awards: their Blanco (dubbed “Crystal”) won a New York Times taste test, and their añejo nabbed Gold Medals in assorted spirit competitions. Tequila production begins with the agave plant, cultivated in Mexico’s desert regions. Early civilizations believed agave was a gift from the gods, which they used as a source for food, fibers and building materials. They would cut off the top of the plant, and the remaining stump filled with a liquid called aguamiel that would ferment into a cloudy, low-alcohol drink. After five years of aging (and hard-earned waiting), Casa Noble founder Jose “Pepe” Hermosillo bids adieu to each bottle by signing and numbering the label. Casa Noble Was One of the First Celebrity-Owned Tequila Brands Another thing to look for aside: a four-digit number that represents each distillery’s unique code. The Norma Oficial Mexicana number (or “NOM”) is assigned by the Mexican government and certifies that the bottle you’re holding is authentic tequila produced in Mexico. It also tells you which tequila producer it comes from. Tequila Patrón, for example, has a NOM of 1492. Jose “Pepe” Hermosillo was born in Guadalajara, Mexico. His father was a salesman in the construction and hospitality businesses and introduced his son to the business world at an early age. His father sadly passed away when Jose was 19, which sparked in him the desire to create something to honor his father and their Mexican heritage.

Casa Noble Crystal (2nd Generation)

When añejo tequila is done right, it’s at once rich and flavorful, smooth yet complex. That’s what you get from Casa Noble’s new añejo, a skillful and impressive blend of 12 extra añejos and nine añejos, aged in new French oak for one to five full years (most añejos are aged for a year max) with notes of ripe fruit, vanilla, white chocolate, roasted nuts, and spice. An undertone of sweet cooked agave recalls this tequila’s fresh Blanco roots. The bottle, resembling an agave spear, is also eye-catching to display. If your bottle doesn’t have a NOM, that means it’s not certified by the TRC (Tequila Regulatory Council), and not an authentic Tequila producer. And what’s inside the bottles has also changed: The new liquid being “more refined” and “reimagined,” though the tequila remains 100% blue agave and CCOF Certified Organic. We received the new reposado only for review. Hopefully we’ll bring you coverage of the other relaunched expressions down the road. Americans, particularly the famous ones, are in love with tequila. Year after year, the category continues to grow in the States, according to the Distilled Spirits Council. In fact, new data suggests it's overtaken whiskey, and will overtake vodka at some point this year. A tequila labeled simply “gold” or “joven” is unaged, possibly with caramel coloring or other sweeteners added.

A silky and savory tequila, Chamucos goes as well with Baja fish tacos as it does with a simple lime slice. A carefully handcrafted tequila produced in small batches, the Chamucos Blanco features notes of vanilla, citrus, cinnamon and fennel. It’s fresh and flavorful, with just the right amount of spice and a hint of earthiness. The tequila finishes with a little heat before going down smooth. Casa Noble Single Barrel 8-year Extra Añejo

Comparing to my most recent notes for this tequila, I’m not seeing any major tonal shifts, save perhaps for a minor reduction in fruitiness. I expect few drinkers will notice much difference at all. Casa Noble remains one of the most solid bottlings in the biz. The “ultra-premium highlands tequila” uses all the beverage buzz words, like “small batch production,” and “distilled in handmade copper pot stills.” But beyond the hype, it’s a smooth, easy to drink option; naturally sweetened with the rich aroma of mature agave plants, with a clean finish.
