Triumphant complexity is a given at Bollinger, but it's the dynamic freshness and vitality that really set it apart as one of the most affordable Champagne benchmarks. In the making of this champagne, reserve wines aged in magnum bottles in the private Bollinger cellar are used that only make up 10% of the cuvée – this fact makes this cuvée very special. A restrained and decidedly youthful nose features notes of apple, yeast, plenty of citrus and a whisper of quinine character.

We can't offer refunds or exchanges on perishable goods such as flowers and food, unless faulty or not as described.

Lots of biscuit aromas and a broad spectrum of fresh-citrus, candied-citrus, red apple and red-berry notes.

To make the highly-esteemed Special Cuvée, grapes are predominately picked from Grand Cru and Premier Cru vineyards. Nearly two hundred years later, Bollinger are one of the biggest names in the region and are famously the preferred champagne brand of fictional British Secret Service agent, James Bond. More than this, sustainable viticulture is a true commitment for the House, for fine Champagne is the product of a fine landscape.

Special Cuvée is the result of blending between harvest grapes and reserve wines in magnums, some aged for more than 15 years. We visited the house in Aÿ to taste the base wines and also tasted some of the rarer grape varieties, such as Arbane, Petit Meslier and Pinot Gris. The non-vintage blend is always based predominately on wines made from the current harvest, enriched with aged wines (their proportion and age varies by brand) from earlier harvests, which impart an additional level of complexity to the end wine.

Bollinger allow their non-vintage to mature on lees for 3-4 years, as they believe that great champagne dominant in Pinot Noir needs time to develop its full character. Decided to treat myself to a nice bottle of bollinger for Christmas day and really enjoyed it, the flavours were amazing really worth spending extra on a nice bottle of bubbly. Their land is spread over seven main vineyards: Aÿ, Avenay, Louvois, Tauxières and Verzenay planted with Pinot Noir; Cuis with Chardonnay; and Champvoisy with Meunier. Champagne Bollinger was established in 1829 by Jacques Bollinger and to this day is still family owned and based in the town of Aÿ. However, with 60-90% of the blend coming from a single vintage, or base year, the final blend inevitably displays subtle characteristics of that vintage. It is the sole grape in Blancs de Blancs, which are some of the richest long-lived Champagnes produced. Richness of spicy-earthy notes carefully intertwined to the lemon, apple pie, baked pear, cinnamon and vanilla tones. Like other cuvées by Bollinger, the Special Cuvée Brut presents a perfectly intense and round body with a delicate fizz.
