This is a chunky, classy tome from Absolute Press (I hope they work the same magic with my book next year! The different style and atmosphere of each restaurant – Noodle Bar, Ssam Bar and Ko – is present in the food and in the pages, with the hints and tricks needed to pull each dish off included. Here the deep fried cauliflower, still with a little bite, is then dressed with the sweet, sour, salty and fiery dressing and finished with plenty of fresh mint and coriander, with puffed rice seasoned with schichimi togarashi providing some textural nuance. The book has three chapters, modelled around each of Momofuku's New York City restaurants: Noodle Bar, Ssam Bar, and Ko, with recipes and stories based around each topic. This will not be a problem for the rest of us who will have a wry smile at the journey of culinary- and self-discovery by the talented David Chang.

A pretty common page in the book: ingredients are set in the margin, italics for the intro, then the steps, and then a bolded section for alternative approaches, along with a picture of the product. But Chang takes you through his story and reveals the process and journey he took to not just cook but to understand. but I adore his effusive love for instant ramen and other humble yet delicious mainstays of every day cuisine that deserve to be applauded as well next to fancier fare. His "surprise" successes stop being surprising--especially given the fact that I found out about him through his TV show and his Michelen stars, not some obscure word-of-mouth Yelp review.

My awe and respect for David Chang started when I transitioned into the food science industry and began watching PBS's Mind of a Chef program. I then saw the chef at the Mexican restaurant experiment with making ramen noodles for himself and a few lucky staff and kinda chuckled. Since I could never eat at Momofuku Noodle Bar (or Ssam Bar or Ko or Milk Bar--Chang flatly refuses to cater to vegetarians), reading his cookbook was the next best thing. In other completely delightful news, Vanderlyle was recently listed in the Good Food Guide with a rating of ‘very good’ - I’m so proud of the entire team who have worked their collective socks off to earn this accolade, and we’re humbled to be listed alongside some truly excellent company, both on a local and national scale.

And the dishes shared in this book are coveted by all who’ve dined or yearned to at any Momofuku location (yes, the pork buns are here). The relatively low sugar content in cauliflower allows it to cook to a high degree of caramelisation without tasting bitter: this was the secret to the legendary cauliflower cheese of which we served hundreds each week at the pub (and which actually saved us from going under, but that’s another story for another day). They gave people what they thought they wanted, up front, even though it wasn’t efficient or what they really wanted to do.
