It is important to note that while there are standard measurements in the industry, there is also room for creativity and experimentation. Bartenders can adjust the ratios of ingredients to suit their personal taste or the preferences of their customers. Part: This is not a particular measurement. Rather, it’s based on the volume of your serving size/glass. All the recipe is recording is the ratio of the ingredients to each other. Parts are great for drinks like sangria, where you could be making a glass or a pitcher. A drop dispensed from the pipette is the smallest bartending measure and after patiently dripping, counting, and measuring, I've found approx. 41 drops equal 1ml. How many drops equals a dash depends on what size you consider a dash to be, and that largely depends on your dasher – the same 1ml measure can be anything from 3 to 6 dashes (with Japanese bitters bottle dashers tending towards 6 dashes). A single or one-sided jigger has a single bowl to fill in and measure spirits. It can look like a simple shot glass or a more advanced measuring cup with different levels. It's great for home bar use but not very common with professionals. In our recipes, a "spoon" is a volumetric measure of 5ml (1/6oz) and stems from bartenders traditionally measuring this volume with a barspoon. Indeed, Bonzer, one of the oldest barspoon brands, continue to design the bowls of their spoons to be exactly 5ml. Teaspoons are more variable in size, with bowl capacities ranging from 2.5 to 7.3ml but an average-sized teaspoon is approximately 5ml.

Once you're used to measuring small amounts of liquids, I recommend switching to a bell or Japanese-style jigger. These allow for faster measuring and pouring. Why is it called "jigger"? You’ll find it in two forms behind the bar, milliliters (ml) and centiliters (cl); with ml being the most common unit of measurement. However they are interchangeable with 1cl equalling 10ml. It's important to note that drops can vary in size depending on the viscosity of the liquid and the size of the dropper. To ensure consistency, it's best to use a dropper with a consistent size and shape. As you can see, one fluid ounce (oz) is almost 20% bigger than the 25ml/2.5cl metric ounce. Substituting 1 floz (29.57ml) with a metric 25ml shot won’t do any harm, and can still produce an excellent drink; just ensure that you’re doing this with every ingredient in the recipe… In the pursuit of consistency and accuracy, I prefer to use bitters bottles with dropper pipettes (e.g. Bob's Bitters) or replace the dashers on brands of bitters bottles such as Angostura and Peychaud's with DashDarts screwtops.
