Well, if you've been following the timeline of events from the previous game, the easy answer appears to be his replacement: Monty Gator.

While exploring the Daycare, Cassie drops onto a gondola ride that moves through a guided tour of Monty Gator's ascent to stardom told via various dioramas. In most images where Bonnie appears purple, he is usually more of a desaturated blue (which can have an illusion of appearing purple). Melted Chocolate Bonnie is the first and only skin to be an edited version of a previously added skin.
