While balance is important to all kinds of beer, it’s especially critical to the drinkability of rauchbier. If not handled carefully, smoke can easily overtake a lighter-bodied, lighter-flavored beer. Now, we know that the ancient people weren’t just purposefully brewing up drinks to get drunk around their campfires. Instead, it was when cultivation of the lands started that they realized how to use grains for nutrition. Of course, I can’t say for certain what Klaus the Caveman was using exactly in his beers, but generally speaking, most beers are made with Malt. An ornate, wrought iron sign hangs over the street outside of the tavern. Once inside I’m impressed by how busy it is for a midweek afternoon. I take a seat by a heavy wooden table under the Gothic vaulted ceiling and enjoy the convivial ambience of people conversing.

Smoked malt is the key to smoked beer. Interestingly, all beer was once brewed with smoked malt. That’s because malted barley was exclusively kilned over wood-fired ovens, where the smoke passed through the malt. This imparted that unmistakable smoky taste in all brewer’s malt as it dried. This impressive smoke repertoire will astonish even your craft-savvy friends, who may mistakenly believe that all smoked beers are ashy messes or bratwurst-in-a-glass. In fact, getting these right is far less complicated than mastering mixed fermentations or any number of advanced styles. It’s so good it deserves my full attention yet I need to share its deliciousness with you. Much like drinking smoky bacon, it makes the perfect accompaniment to traditional German sausage, sauerkraut and mashed potato. Sadly it’s the last bottle I brought home with me from Bamberg, Germany, a picturesque historic town with over 2,000 buildings deemed UNESCO World Heritage worthy. It’s an easy day trip from Munich or Frankfurt. I love smoked lagers. I love them for their complexity of flavors yet the simplicity of their construction. (I once had a lengthy discussion with a brewer who was convinced that “smoked hops” would make for a radical new flavor. He just couldn’t accept that all he needed to make a great smoked beer was some smoked malt using his usual process.)

Step 1: We add the beer, onion and brats to a large cast-iron skillet and bring the mixture to a simmer (photo 1). You can do this indoors or outdoors if your grill has a side burner. The biggest issue I see is the availability of fresh smoked malt and, with that, repeatability,” says Florian Kuplent, cofounder and brewmaster at Urban Chestnut in St. Louis. “The smoke character diminishes over time, and it’s not always obvious how old the malt is.” Smoked beers refer to all beers with a smoky flavor. No… the beer isn’t put in a smoker like making smoked ribs!Scott, William Shawn (2012). "Project Grodziskie: A Polish Renaissance" (PDF). Zymurgy (Nov/Dec 2012): 34–39.
