I’d never made kofta before, but I was surprised at how straightforward the whole dish was to pull together – I was able to make the kofta while the sauce simmered, and the whole thing probably only took around 40 minutes (and I’m a slow chopper!) I did lose one kofta to a crumbly death in the frying pan, but I soon learned that if you squeeze them together quite tightly when rolling them into balls, they behave much better.I sailed across the Palk Strait to Sri Lanka, where lunch means a selection of curries each made from one main ingredient – beetroot, aubergine, pumpkin, cashew – served alongside a coconut dal (parippu). I travelled east to Thailand, and on to Japan, where the katsu curry bears little resemblance to anything I’ve eaten anywhere else. This is a huge boon to home cooks who love the flavour and texture of deep-fried foods but hate the fat, calories, mess, and danger that accompany frying foods in a pan of hot oil. As I finish writing this book, Arya is a toddler and starting to piece her first words together. I’ve felt so much guilt along the way and I am sure this tension between work, life, and motherhood will always be present. But if there’s one lesson that I wanted to teach my daughter from the moment I met her, it is this: she should dream. Sometimes what she dares to dream won’t be easy to achieve, but it’ll be worth it in the end.
