Try this vegan nut roast, which is perfect served hot for Christmas dinner, or cold for your festive buffet table.

Heat the oil in a large frying pan and gently fry the onion, celery, leek and carrots for 5 minutes, or until softened, stirring regularly. Add the garlic and cook for a few seconds more. Parsnips (10%), Butternut Squash (9%), Gluten Free Breadcrumbs (Rice Flour, Gram Flour, Maize Starch, Salt, Colours: Curcumin, Paprika Extract; Dextrose), Onions, Sweet Potatoes (8%), Apples (Apple, Acidity Regulator: Citric Acid; Antioxidant: Ascorbic Acid), Pasteurised EGG, Carrot, Whipping Cream (MILK), Shallots, Romanesco Cauliflower, Cashew NUT (3.5%), Camembert (3.5%) (MILK), Water, Butter (MILK), Quinoa, Sugar, Honey, Sunflower Oil, Garlic, Modified Waxy Maize Starch, Salt, Ground Cumin, Thyme, Ground White Pepper.This chunky roast has a meaty, reddish hue to it. There's plenty of herby flavouring, and the cranberry sauce added during cooking adds moisture and sweetness. Our tasters were impressed by how much bite the fake meat had, although some felt it was more like a giant, albeit tasty, sausage than a centrepiece roast.

Whether catering for a vegan family member, or feeding a whole table of vegetarians, there’s no need to limit them to a plate of roast potatoes (as delicious as that may be).

The filling is tasty with a Moroccan-style spicing according to Waitrose. Not all our tasters were convinced by the pastry, however, with some finding it too bready in the centre of the swirl. Our judging panel was particularly impressed by the festive aroma emanating from Waitrose’s miso-enriched, herby roast. The abundance of roasted almonds and Brazil nuts evoke the spirit of Christmas, while the mixture of dried fruit — most noticeably juicy jumbo raisins and zesty clementine — adds balance. From vegan ingredients you can cook up a storm with at home to full vegan ready meals you can simply heat through and enjoy, there’s something to suit for just about every meal time. We’ve even got vegan ice cream in our range, as well as everyday essentials such as vegan cheese.Spoon the mixture into the prepared loaf tin. Press down with a spoon firmly to compact the mixture. Cover with foil and bake for 30 minutes. Remove the foil and bake for a further 20 minutes, or until the loaf is hot throughout and lightly browned. It slices easily, too, although our tasters were crying out for some gravy to really tie the flavours together. Preheat the oven to 200C/180C Fan/Gas 6. Lightly oil then line the base of a 900g/2lb loaf tin with baking paper.
