Distilled since the 1870s, Tanqueray is now produced at Camron Bridge in Edinburgh, Scotland, one of Europe's largest distilleries. What's most amazing is that this four times distilled gin uses just four botanicals: juniper, coriander seed, angelica root, and licorice. Blue Bottle Gin is the creation of head distiller, Matt, whose interest in Gin and passion for the craft of distilling was rewarded when he was made a Scholar and Freeman of the Worshipful Company of Distillers. Blue Bottle Gin can be found at various bars and restaurants throughout Guernsey. We love the shape of this bottle, as it’s completely unique and we’re yet to see another gin (or spirit) with a bottle like this. You cannot miss Bombay Sapphire on the liquor shelf. Its blue bottle has an allure that will catch your eye, though the gin itself is not blue—look to Magellan Gin for that. This is the signature gin used to make a Sapphire martinias well as the Sapphire alpine. The two blue martinis use blue curaçao to get that beautiful color, and they're a delight to drink. How We Met: I'll admit it. I was crushing on Gray Whale Gin long before ever trying the spirit, just after one look at that gorgeous blue bottle. I was already a fan of some other small-batch craft gins distilled in the U.S., but I was particularly intrigued by this gin's unconventional botanicals as well as the brand's incredibly rad, eco-friendly mission. You can also explore the effects of aging on gin—something most gin is not subjected to—with Martin Miller's 9 Moons. This bottling rests the gin in previously used bourbon barrels for nine months to give it a fascinating sweetness of vanilla and oak.

At last count, this waterside watering hole had over 600 varieties – the largest collection of gin in the south west. Up your gin game at one of their special events or make it your life’s mission to work your way through their impressive gin list. Last week, locally-produced Wheadon’s Gin was showcased at the world premiere of The Guernsey Literary and Potato Peel Pie Society in London. Distilling proves a much faster process as well, especially when compared to the brewing process for lager, a German word that means “storeroom” which refers to the fact that the style of beer must be stored. Randall’s Breda lager, for instance, takes five weeks to ferment and mature whereas Matt can turn around an ale in about five days.Martin Miller's is a modern take on traditional gin. It has that wonderful juniper dominance of a London dry and it is perfectly balanced, crisp, clean and simply an extravagant gin. Whereas Matt once found beauty in flies and blood cells, he found his passion in brewing. After leaving the world of academia behind and completing a Masters degree in Brewing and Distilling at Heriot Watt University in Edinburgh, he cut his teeth Down Under at Australia’s second largest brewer, Lion Nathan, where he helped, amongst other tasks, to develop new products.

Alongside the traditional juniper, drinkers can delight in the tropical (almost coconut) scent of the local gorse flowers, which annually turn the Guernsey cliff tops into fields of bright gold. These flavours are complimented alongside the sweetness of nutmeg and hint of cubeb pepper. In the run up to his PhD and post-doc studies in hematopoiesis (the formation of blood cell components from stem cells), Matt spent a summer at Cambridge University on a Royal Society internship studying bugs, specifically flies, and even more specifically, blue bottle flies. Under the microscope, he found the indigo wings of these household nuisances to shimmer intricate patterns of iridescence unique to the majesty of nature, patterns that people peeved by the pest do not perceive. With sales of gin fizzing, we take a look at some of these British spirit innovators who are based on the coast and find out how the location shapes their product.

This is the kind of bottle that would sit on your shelf long after being drunk because it’s so beautiful and unique! Aviation is produced in Portland, Oregon, by House Spirits Distillery. It is distilled from neutral grain spirit with 100 percent rye base, an unusual beginning in the gin market. It's flavored with juniper, anise seed, Elettaria cardamom, coriander, lavender, sweet orange peel, and sarsaparilla. It, too, is slightly overproofed, bottled at 42 percent ABV (84 proof), so it's not as delicate as it's often made out to be.
