We decided to leave the edges of our bakeware unrolled, removing the risk of water traps and uncoated carbon steel edges that might rust – making them completely dishwasher safe. Thanks to Vanessa, one of my readers: I’ve made this several times using gluten-free flour, I just add a teaspoon of baking powder and twice as much milk, as I find gluten-free flour tends to absorb more moisture. Though if you wanted to, you could certainly experiment with adding a teaspoon of baking powder into the mix. Today I added freeze dried strawberries and coconut to make my loaf cake, it held up well with adding other ingredients and tastes delicious.
