I thought I’d done something wrong in the recipe as my banana bread didn’t seemed cooked and was extremely gooey in the centre despite leaving it in the oven for much longer than your recommended time. Scatter over the demerara sugar and bake for 1 hour - 1 hour 15 mins, until golden brown on top and there is no wobble in the middle. Jamie wholeheartedly believes that cooking is up there as one of the most valuable skills you can teach a child. To check if it’s done, stick a cocktail stick or skewer into the middle of the loaf, remove it after 5 seconds and if it comes out clean the loaf’s cooked; if it’s slightly sticky it needs a bit longer. Simply wrap the cooked and cooled banana bread in a double layer of baking paper, followed by a double layer of foil and place in your freezer, where it will keep for up to 3 months.

We are forever leaving bananas until they are brown, and banana bread is such a great way to use them up and avoid food waste.
