Liquid food coloring can throw off the consistency of youricing, especially if you have to add a ton to achieve the color that you’re after. Add in a generous squirt of red gel food coloring or about a 2 tsp of powdered red food coloring once the frosting is fully made, and beat on low until it reach the desired colored.

While we’re on the topic, I have one important piece of advice around making frosting in advance. As buttercream sits and/or thaws, it usually gets tons of tiny air bubbles in it!I love rainbow dust progel food colouring– I have used them for years, and I love them. I love that they are in a tube because they are easy to use – and get out what you want, without getting a spoon dirty and accidentally getting food colouring everywhere! It’s way easier to turn pink buttercream red than to start with a white buttercream base and make it red.

Red frosting is one of the worst offenders, and there are a few ways around this. The first option is to use a “no taste” red gel food coloring, which helps reduce the bitter aftertaste. I prefer to use a baking spread like Stork for the cake, and unsalted butter for the buttercream as I find they provide the best results. For teaspoon (tsp) and tablespoon (tbsp) measurements, please use measuring spoons* and not the type of spoons you eat with. Again this will ensure accuracy and provide the best results.
